"Operation" is slang for cutting the carbs in bagels and hoagie rolls by pulling the dough out of the inside and leaving enough of shell or crust to hold the lox and cream cheese, or the ham, provolone, and peppers. I've been seeing women pull dough balls out of their bagels for several years, have yet to see a man do it, and didn't know that it had a name until I heard a business friend order an "operated bagel" at a breakfast meeting. The server understood just what the customer wanted and, in response to my question, told me that orders for bagel operations were definitely rising. It may sound like peeled grapes or pre-buttered bread, but offering "operated" or "fixed" bagels would certainly attract calorie and carb counters. And surely someone will invent a curved-knife machine that will reduce the labor costs involved in pulling out dough balls.
