Michael Eskin, associate dean in the faculty of human ecology at
the University of Manitoba, has been awarded the prestigious T. S.
Mounts Award by the American Oil Chemists' Society (AOCS). This
award recognizes research in the science and technology of edible oils.
Eskin's research has ranged from establishing the properties and
performance of canola oil to his more recent work related to the impact
of minor components on the stability of edible oils. The award was
presented in May at the Annual Meeting of the AOCS in Quebec, QC.
