Bourbon Vanilla Ice Cream Balls, which topped the ice cream category in
the 2007 Caterer and Hotelkeeper Excellence in Food & Drink Awards,
given in association with caterers' organization 3663 First for
Foodservice. Designed by Parisian pastry chefs for restaurants and
hotels, the luxury ice cream balls made from purely natural ingredients
were cited for their use of "creamy dairy vanilla ice cream, which
is made from 65% whole milk and 13% double cream that has been infused
with Madagascan Bourbon vanilla seeds scooped freshly from the pod,
along with vanilla essence."
