Hamburg.
What do customers want from the food industry? Something between
the contending ideas of more health and more indulgence.
That will be the focus of Internorga, 82nd International Fair for
the Hotel, Restaurant, Catering, Bakery and Confectionery Trades in
Hamburg, Germany, March 7-12, 2008. There are four mega-trends which run
through the out-of-home food sector--snacking, high convenience,
indulgence, and healthy eating.
There is a close relationship between more snacking, and the
decline of the traditional three meals a day pattern. The movement
towards consumption of smaller portions throughout the day is increasing
the demand for small, varied products for eating outside of formal
meals.
