Does it seem to take forever to massage your ham? CFS has launched
the PowerCure, a massaging machine said to enable ham producers to
improve product quality while reducing processing by 20% to 70%, thus
saving costs in handling, cold storage and energy.
Traditionally, processors need to be patient to produce quality
ham, which requires a hold-over night in cold storage. Another challenge
is finding the right equipment to massage raw materials. For most ham
products, mixers are too aggressive and tumblers too soft.
The paddles of the PowerCure ensure a gentle and dynamic massage
technique and an efficient process. The full surface heating and cooling
technology supports the shorter process time and the uniform color
development. The unit thus brings added value to a wide range of
reformed and whole muscle hams.
The PowerCure is a straight through process on a small footprint
with a fixed layout and one product flow direction. Vacuum loading and
automatic discharge of the products requires less handling. The 80%
filling grade, in combination with high heating and cooling capacity,
increases the throughput per hour and therefore reduces the cost per
pound.
This technology also improves uniform color development, binding
and texture, resulting in better appearance, texture, aroma and taste.
