Remember Joe Blankenship, the one-time Little Rock entrepreneur battling creditors and the IRS?

Among his investments is a stake in the Gunther Toody's restaurant chain in Colorado. We're told six of the retro diners are in the Denver area with two more in Colorado Springs.

Gunther Toody's, an American-casual eatery, was started in 1986 by Kim and Ronda Hopfenspirger. They sold it about five years ago.
