I have an example you can use, with a lot of illustrations, on the following website, free: http://planasyougo.com/example-initial-sales-forecast-for-a-restaurant/
That should give you at least an idea of how and where to start.

How does one calculate projected sales for a restaurant?
I am writing a business plan for a restaurant but am having trouble in getting decent sales projections. What do I base my projections off of? Is there a formula?
